For more than five decades, Hanse Stube at Excelsior Hotel Ernst has combined culinary tradition with contemporary influences, making it one of Cologne’s most renowned gourmet restaurants. Head Chef Lars Wolf reinterprets classic French haute cuisine with Rhenish influences, combining timeless dishes with modern refinement. Together with Restaurant Manager Maria Friedrich and her team, he creates memorable dining experiences defined by genuine hospitality and exceptional service. Maria Friedrich fillets and carves dishes, including traditional braised ox brisket, tableside on the classic silver service trolley. The menus are complemented by wines from the hotel’s cellar, featuring more than 650 labels.
