Michelin-starred chef Jean-Georges Vongerichten has collaborated with One&Only Palmilla since 2008. The new restaurant SEARED under the direction of Executive Chef Stuart Roger offers an array of steaks choices including Tomahawk and Dry Aged NY Strip displayed in a glass-walled meat cellar with a dry-edge curing room. The new menu also highlights the best of the fish and seafood from the Baja as well as some of the Chef’s favorite signature dishes.
The restaurant offers an understated elegance of warm natural colors and accented by original Mexican techniques designed by Jeffrey Beers. The design features an entrance way encased in amber glass, amber chandeliers, tawny marble with candlelit nooks and Aztec geometric marble floors.
Hamachi, warm shrimp salad, and mushrooms were all very good and the highlights of the meal. The steaks were quite disappointing though. The “prime” steaks are absolutely not USDA prime but you’re paying the price. Tried to fix them with sauces but both the peppercorn and the bernaise didn’t help. The peppercorn sauce was sickly sweet and the bernaise was a light foamy thing that was just wrong. It’s a direct child of a French mother sauce, do it right.
I’m used to steakhouse prices for wine, but this is insane. A 2000 Leoville Les Cases for $2000? Come on, that $300 retail. (That specific example might be off but I saw several things on there that I know well and the mark ups were obnoxious).
We were in Vegas just two days prior and went to Jean-Gorges Steakhouse in the Aria there and had a similarly poor experience. Very sad and I won’t be going to any more of his restaurants.
We originally made the reservation for Valentines evening it also fell on my husband’s 70th birthday it was just him and I on a romantic evening I was notified that I at the last minute would be required to have a set menu at $450 .
Per couple I had no problem with that other than thinking that they had chosen to do that throughout the restaurant it was my only option at a late notice.
Upon arriving I found that there was many people ordering off the menu as well as dining in the restaurant I had chosen for the special occasion I was very disappointed with the amount of money charged which was over $800 overall with wine pairing, which we are asked to be corrected as we were only quoted the 450

just disappointed with the ability to not have what we felt we had made a reservation for the correction to our bill was made but it also made the evening and in kind of a dispute that was in an embarrassment to my husband
I never really ever write a negative about experience is always looking for the positive but I have to admit this time I was greatly disappointed although the food was good it wasn’t what we planned on eating.
Excellent food and service
I have had the opportunity to dine in terrific restaurants all over the world. The quality of the food at Seared was almost perfect with The exception being the beef carpaccio was a bit dry.
Our waiter was most enthusiastic and the service was absolutely five-star.
However, the pricing was equivalent to Hong Kong or London which simply is not justified in Cabo.

Seared is a beautiful restaurant but over the years it has become extremely expensive and the waitstaff are horrible. We sat down for dinner at 6:30 and it took 3 hours to get our appetizers and entrees. We were lucky. The table behind us received a bowl of soup in 2 hours. For the price that they charge for the dining experience it should be a 5 star restaurant. Not even close. I live in San Jose part time. I stopped going to Seared and now I have a very good reminder why.
Wonderful setting where service almost outshines food - which is saying a lot as food is stellar.
The One and Only is an amazing place so Seared is worth the visit just for the scenery and ambiance alone. Ask for a table on the outdoor patio. We had lovey cocktails and enjoyed a delicious truffle pizza in the bar before our meal. They had live music from a great 3 piece band which kept the noise level just right.
For dinner we had filet, lamb, brussels sprouts and french fries. Everything was perfectly prepared but the menu lacks creativity and is just so tired. The som was great and helped us select a delicious, albeit pricey, Mexican wine.
8:00 reservation, sat immediately by friendly staff. Ok so far. Server was helpful with recommendations and order was placed timely without feeling rushed or delayed. Still going ok. Salads came but missing a requested added ingredient. Annoying but not unusual. Then everything went wrong. They bring out my wife’s vegetarian entree and the baked potato that we were to share. The baked potato was small by steak house standards and cold. My steak is nowhere to be found. We sit, we sit, we sit, get two apologies from the waiter and manager. They bring out a ravioli dish that I did not order to kill time. It was inedible. At this point my wife’s meal is cold and still, over an hour later, no steak. The steak finally comes and it was horrible. Under cooked such that the center was cold, it too was inedible. It also tasted like no preparation or seasoning had been done, no care or thought given to its taste whatsoever. Will never go back. A complete waste of an evening and an opportunity for a great meal.
High-end, top-notch restaurant with attentive and knowledgeable staff. Everybody in the group was pleased with their meal.

This is the 4th time here and unfortunately the service was poor. We asked to be changed in Pesos and they said yes then charged us in dollars. The excuse was Visa is only charged in USD. AMEX is either. When I was done laughing I didn’t exactly call him a liar but told him we’ve been in Cabo for 8 years and Seared is the first and only place that had ever said that and surprise, surprise they managed to pull it off.
Honestly, it seems to be going steadily downhill which is really a bummer because the 1st two times were excellent. Not coming back anytime soon.
Service was amazing but the menu was not innovative for Chef Jean George. We were expecting a lot more for the price and was dumbed down americanized. Some creativity would have gone a long way.

is not the best food, great service, price is too high comparing what you eat, wine too expensive (if you know the real value for the bottles), I won´t recomend this place, you could fine better places vs quality food, I repeat the spot and service is really nice, BUT not the food,
To start on a positive note: the ambiance & setting were outstanding. The service was attentive with lapses of consistency.
The food was outrageously overpriced for example, I ordered the bacon-wrapped shrimp - it was served w/o the bacon & it took nearly a half hour to be served!
I ordered the filet mignon medium & it was served medium rare, cool & over seasoned.
I ordered a baked potato w/bacon crumbles & butter - it came cut in half & cool with bacon back fat & melted CHEESE on each half!
My wife ordered the shrimp which was cool & “rubbery” (to read: over cooked). She ordered a baked potato w/butter on the side - her potato was also cut in half & cool!
I ordered a single espresso & got no more than a 25ml portion!
I have eaten at most of the fine steakhouses in this country: Peter Luger’s, Gallagher’s, McCormick & Schmidt’s, Ruth’s Chris, Charley’s, The Metropolitan Grill, etc., etc. & never had such an expensive & poor meal at any of these.
The wine list was extensive but outrageously priced - even the Mexican selections.
I DO NOT recommend this restaurant!
The beef carpacio starter is out of this world
A must if you like quality food and service in Cabo.
For the price, the food was just OK. 75% of wine bottles are >$1,000 which is just absurd, especially given that the food was mediocre. Will say our dessert was amazing (passion fruit tart). Service and ambiance great except for having to deal with my credit card being run in pesos (corresponding USD value was incorrectly entered as pesos) and then was asked to come back to the resort (was not staying there) which I thought was ridiculous. Luckily they were able to run the credit card from their end again but not exactly a situation you would expect from a top tier restaurant.
Everyone was extra attentive and the steak and fish were done to perfection.

Our experience was lovely. Service was great, the meat selections were very large but wonderfully prepared. They are very pricy so be prepared. Worth it though for a fun night out.
Fantastic, super high end dining
$60 chicken was sadly over cooked and dry. I was brought the wrong appetizer by ?accident and although they did offer to change it I declined so as not to set off timing of rest of meal. Steaks were very good but not the gastronomical experience we were expecting for the price.

Overall the ambiance was nice the music too loud the service good the steak mediocre at best. Very disappointed in this Jean George experience sub par for him. I have had better steak at outback and these steaks were $130. Nuts. Will not be back.
We expected so much from a renowned chef in a 5 star resort. This was just like any other nice steakhouse in the usa and nothing more. Wine was ridiculously marked up. We'd not recommend it.
