On a Friday a guest and myself dined and were seated at the Ceviche Bar in the corner right in front of the cook with ear eyesight if the kitchen line. I want to start off by saying that the food was very tasty, with great flavor. Though the plantain chips were stale, and the short rib needs to be cooked longer it was still touch and should fall off the bone. But the reason for my rating is the extreme lack of food safety standards when is comes to production. The main concern is with the Ceviche cook. I witnessed him all night use one set of gloves (which is great) however defeats the purpose when you never change them. He handled raw tuna with one set of gloves and while still wearing them grabbed plates, used the handheld ordering device, grabbed ready to eat foods such as tomatoes and micro greens, grabbed his knife. All without changing cloves or washing hands. If that was not enough he proceeded to make another dish grabbing raw scallops and repeating the process above. These gloves were not changed in over 20 minutes and have cross contaminated the whole station not to mention extremely dangerous raw seafood that goes out to customers. Not 1 time did he wash his hands. Second, the entire kitchen staff on the hot line did not use gloves, they plated food with bare hands the whole night. I’m talking the food that was cooked and being plated. I chose not to eat ceviche as I am not going to put my health at risk. I did reluctantly eat the short rib as I was with a guest and did not want to ruin the evening. In today’s world and our knowledge of food illness and our standards this is absolutely ridiculous and I would strongly recommend eating your food somewhere else that takes pride in your safety. That whole countertop, plates and everything on the ceviche line should be cleaned and decontaminated. What a distance that a chef allows his kitchen to operate in that manner. Especially an open kitchen.

Amazing food once again. Sat at the ceviche bar this time and it really gave you a different experience. Learned about the sauces and influences for various items and how and why they go together. Everything we ate was amazing. We didn’t repeat any items from our last visit- even though that was a difficult decision because we had great dishes the last time. So full that we took desserts home and ordered a bucatini for the next day! Drinks were phenomenal as well!!

One of our favorite restaurants in San Antonio. The fresh cebiches and lomo saltado are always our go to. The ambience is a great vibe with one of their delicious and classic cocktails. And of course, the friendly service. Aina is a true gem.
