Our cooking is grounded in a deep connection to place — the Canadian Pacific Northwest — shaped by coastlines, valleys, forests, and urban gardens. We work closely with farmers, growers, and foragers to highlight the natural abundance of British Columbia, letting each ingredient speak clearly and honestly. At Burdock & Co, we primarily offer a seasonal tasting menu — a curated progression that reflects the moment, the land, and the people behind the ingredients. Our wine program follows the same philosophy: thoughtful, artisanal producers, a respect for the land, and wines that transparently express where they come from.
