Yūgen Omakase offers an intimate and refined dining experience rooted in the tradition of Edomae sushi. Guided by the philosophy of omakase, guests are invited to leave the choice in the hands of the chef and experience a menu shaped by seasonality, precision, and craftsmanship. Our omakase unfolds through 20 to 25 courses, guided by Japanese technique and the natural rhythm of the seasons. Subtle variations may appear within the same season, while more profound transformations emerge with each seasonal transition. The experience takes place at the counter, where guests are seated in close proximity to the chef. Every movement, every cut, and every gesture becomes part of the journey—from the warmth of the rice to the balance of each bite. This direct interaction creates a calm and focused atmosphere defined by attention, elegance, and authenticity.Yūgen is a space designed for those who appreciate simplicity, depth of flavor, and a truly personal dining experience.”
