Chef Kohei, originally from Miyazaki in Kyushu, Japan, prepares standout dishes such as Chicken Nanban, Goma Saba, and slow-braised Pork Belly. Guest favourites include Pork Belly Yakiton skewers, Hamachi Crudo, Beef Tataki, Miso-glazed Eggplant, and our hand-chopped, house-made Gyoza.Bar Shozan’s beverage program is led by Squid-Ti, an Advanced Sake Professional certified in Tokyo under John Gauntner and a Shochu specialist trained through the Japan Sake & Shochu Makers Association in Kagoshima.
