Tesfa’s family originates from a small village in the southernmost part of Ethiopia near the border of Kenya. Drought, tribal conflict, and war forced the family to move from place to place and business to business to find somewhere better to call home. Through it all the family always carried hope in their hearts. In Ahmaric, the language of Ethiopia, Tesfa means “Hope.” We all hope to find somewhere better to call home. We all hope to provide something lasting for our family. We all hope to have something that contributes to making the world a better place. This is our hope. Tesfa Ethiopian Cuisine hopes to contribute to making our community a better place by serving fresh, healthy, authentic Ethiopian food, providing a gathering place for friends and family, and sharing in the hope for a better tomorrow.

Dining in Ethiopia is characterized by the ritual breaking of injera and eating from the same plate, signifying the bonds of loyalty and friendship.Injera, the traditional Ethiopian bread, is part of every entree. It is pancake-like bread on which the various stew dishes are served. The traditional way of eating it is with your fingers, which in itself is a delicate art. A bite sized piece of the injera is broken off to pick up a mouth full of the chosen dish.Ethiopian dishes are characterized by the variety of spices from which they get their exotic taste. Watt is a stew that comes in the form of beef, lamb, chicken, fish and vegetables. These range from spicy watt to very mild. The mildly seasoned watt is called Alicha.Ethiopian Diamond Restaurant all dishes are free from artificial coloring, artificial flavoring and artificial preservatives. We use vegetable oil in all vegetarian dishes, No butter, no eggs, no milk, no honey.

Awash does not look promising from the outside, other than the free parking lot in front. But inside, it's a beautiful, clean restaurant with tables spaced widely apart to permit easy conversation with one's eating companions. The food was delicious. We devoured the appetizer, which is somewhat like an empanada, but crisper. Our favorite was the spinach-filled one. Although several combos are listed on the menu, only one meat combo is available. We really enjoyed this, and it came with one chicken, one lamb, and one beef selection in addition to assorted veges. We also enjoyed the lamb tibs. The injera (Ethiopian bread) was less spongy than most, which made for easier scooping up of the food. We will definitely be back.

The food here is amazing! Everything was excellently spiced, the tea was delicious, and the fish was perfectly fried. The only issue was the service. We were seated very quickly, but our meal took over 2 hours. The appetizers came shortly after we ordered, but it was over an hour until our entrée arrived. When it was time to pay the bill, we couldn't get a hold of our waitress and had to ask the manager to take our check.
