At Kyōten (kee-oh-ten), rare, wild, ephemeral ingredients are what form the basis of Kyoten’s identity. Fish are sourced predominantly from Japan, and seasons vary day to day, moment to moment. Chef Otto Phan serves otsumami and sushi personally with bold expression of character and personality while still being grounded in Edomae sushi disciplines of purity, harmony, and balance. His work is a testament to the relationship between the transcendent forces of nature and humanity. Kyoten explores the limits of taste, craftsmanship, and understanding of the human experience.
