Tonatiuh Cuevas is the chef in charge of this new culinary adventure, which seeks to showcase seafood and pay homage to the gastronomy of the Mexican Pacific, particularly that of the Nayarit coast, presenting as its signature dish “zarandeado” fish (a traditional grilled red snapper or sea bass marinated in a dried chile paste or lemon and beer).
